Ingredients (Serves 4):
- ½ cup mayonnaise
- 1 tablespoon of lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons chives,
- 1 celery stalk, finely diced
- 1lb cooked lobster meat
- Kosher Salt
- Freshly Ground Black Pepper
- 3 tablespoons butter, melted
- 4 split-top hot dog buns
Directions:
- In a medium-size bowl, whisk together mayonnaise, lemon juice, lemon zest, chives, and diced celery.
- Gently fold in lobster meat and season to taste with salt and pepper. Set aside.
- Heat a large sauté pan over medium heat. Brush the inside of the top slice buns with melted butter and place face down in the pan. Toast bun for 2 minutes or until golden brown.
- Divide the lobster salad between the four buns and serve with your favorite potato chip.
