- Place on a dish in the refrigerator and thaw completely. Take out 1 hour before cooking.
- Preheat oven to 350°F.
- Sprinkle chicken generously with salt and pepper.
- Place on roasting pan and roast for 20-25 minutes, until 155°F.
- Preheat grill to medium-high.
- Brush chicken with olive oil and sprinkle generously with salt and pepper.
- Grill off direct heat for 15-20 minutes or until 155°F.
